The pre-order bonus: Vintage Vice City Pack

What's the difference between the two editions?

Is the Ultimate Edition worth $20 more?
For heavy GTA Online players, yes — the bonus currency and GTA+ month offset the cost. For story-only players, the Standard Edition is enough.
Does GTA 6 come with a disc?
The physical version is a code in a box, not a disc. Both physical and digital deliver the same game.
